Bison
Frequently referred to as buffalo, meat from the American bison provides a great alternative to beef. Although eaten in North America for several thousand years, bison is still considered a game meat and retains a less-domesticated flavor than other meats, such as beef.
Nutritional value
Most importantly, bison is lower in fat than other meats; it is nearly 75% lower in fat than beef. By being low in fat, the bison cooks incredibly fast, making it ideal for quicker cooking methods. (And also making it much easier to overcook and burn.) In addition, bison is also higher iron and lower in sodium than other meats.
