Oats
Once considered an inferior grain because they cannot rise when baked, oats are now one of the more popular alternative grains. Even the Greeks and Romans considered oats a weed. In fact, it wasn't until the 17th century that oats became popular in Northern Europe where they could be grown easily in the wet climate.
Nutritional Value
Oats are one of the healthier grains available. They contain no gluten - which is incredibly useful for those with gluten allergies. Also, oats contain more fat than other grains, such as wheat. Oats are also high in beta-glucans, which are highly concentrated in the bran and are good for blood cholesterol.
Rolled Oats
Rolled oats are the most popular variety of oats available today. These are whole oats that have been steamed soft then pressed thin. When thin and pre-steamed, water (or any liquid) is more easily absorbed during the cooking process. This makes rolled oats cook faster than other oat varieties. The speed of cooking also makes rolled oats more popular.
Trivia
About 95% of all oats produced are fed to animals or are used in cosmetics. The remaining 5% is for human consumption.
