Baked Quinoa Stir Fry

A pretty simple baked quinoa stir fry that is equally sweet, spicy and crunchy. Read a few details about this recipe.

Needs

  1. 1 cup quinoa
  2. 2 carrots (diced)
  3. 1 onion (diced)
  4. 2 cups pineapple juice
  5. 1 cup broth (any kind)
 

TIME

  1. PREP: 5 minutes
  2. COOK: 20-30 minutes

SERVES

  1. 2-4 servings

Cooking it up

  1. After cooking the quinoa up in broth, fry it along with the carrots, onions and one cup of the pineapple juice over medium high heat for five to ten minutes (or until juice is cooked away).
  2. After the quinoa, carrots is fried up, move it into a baking pan along with the other cup of pineapple juice.
  3. Cover pan then bake at 350° for 15-20 minutes or until the pineapple juice is fully cooked away.
