Beefy Rice

Instead of making more bland, fluffy rice, why not add some real flavor to the rice? Read a few details about this recipe.

Needs

  1. 1 1/2 cups beef broth
  2. 1 onion, finely chopped
  3. 1 clove garlic
  4. 1/2 cup rice
  5. 2 tomatoes, diced
  6. 1/2 cup tomato juice
 

TIME

  1. PREP: 10-15 minutes
  2. COOK: 30-40 minutes

  1. 4-6 servings

 


Cooking it up

  1. Place the 1 1/2 cups of beef broth over low heat. Just before it reaches a boil, add half of a finely chopped onion and a clove of garlic into the beef broth. Increase the heat, bringing the beef broth to a boil. Once boiling, add in salt (unless the broth is already salted).
  2. As the beef broth reaches a full boil, stir in your rice. Let that cook for a minute before reducing to a simmer and letting the broth cook away. Once the beef broth has cooked away let that rest off the heat for at least five minutes.
  3. While the rice is cooking heat a medium sized skillet. Pour in the half cup of tomato juice along with the other half of the chopped onion and the diced tomatoes. Stir gently and slowly work in your rice (after the rice has rested).
  4. Cook that for five minutes, stirring every thirty seconds. Remove from the heat and plate up.
