The ingredients
Bison is low in fat and cooks fast as a result. As a result, this recipe takes about half the time it would if you were using a fattier meat such as beef.
Brown rice flour works as well as white rice flour to provide extra crunchiness for the meat balls. However, brown rice flour will tend to taste grainier as it contains more fiber than white rice. Also, as it is starchier, the white rice will get crispier than the brown rice.
When cooking
Since the bison takes a lot less time to cook the chances of burning increase tremendously. Also, the bison will stick to the bottom of the pan if not flipped just as it starts to brown. A little sticking adds flavor; a lot of sticking burns.
The canola oil is only one option - this fries well in nearly any oil that can withstand higher heats during cooking.
