Bison steaks are similar to beef steaks however the cooking time is radically different. Bison steaks (as with all bison) will finish cooking much faster than beef. Also, bison tends to taste better when medium rare (150°) so this recipe gives instructions to cooking the steaks to that temperature. For medium to medium well meat, cook the bison to no more than 165°.

The leeks, garlic and buttercup squash seeds are for added flavor. Nearly any flavorful vegetable would work, including carrots, celery or shallots. These are added to give the steaks extra flavor.

Frying the seeds with the garlic and leeks will enhance the flavors collected during the baking with the steaks. Also, this will soften the seeds further making them chewier when eaten.
