Broccoli-Pineapple (More Information)

This recipe is very simple. The sweetness comes from the pineapple that intensifies in sweetness when fried. Even when frozen after being fried, the pineapple's taste remains intense. Although this happens with every fruit, it is more extreme in the pineapple than in other fruits since the pineapple is higher in natural sugars.

The shallots are in this recipe to add in extra flavor without overpowering the broccoli or the pineapple. An onion would be too strong and would kill the other flavors in this recipe. The shallot however is milder leaving only hints of the shallot in the final dish.

The broccoli is the main ingredient in this recipe. Quickly blanching it in the pineapple juice gives the pineapple a taste of the pineapple and therefore brings the ingredients together.

There is a chance of overcooking the broccoli - either by cooking it too long or by burning it on the bottom of the pan. To avoid cooking it too long remove it from the heat when still almost raw. The excess steam from the pineapple will complete cooking it.

To prevent burning the broccoli, add in enough pineapple juice. If too much of the pineapple juice has cooked away by the time the broccoli is added, then add in a little more of the juice.
