Carrot Creations (More Information)

Carrots are sweeter than potatoes, and moister than most potato varieties, however carrots can still make a great substitute for the potato. Here are a few of our favorite options:

  • French Fry Carrots: Cut the carrots into thin slices and fry in a cup of oil (any kind). Remove from the oil just before the carrots brown. (These taste great with the veggie meatballs.)
     
  • Carrot hash-browns: Cut the carrots into paper thin slices (with peeler) and fry for carrot hash-browns.
     
  • Baked Carrots: Cut the carrot in half, length-wise, and bake in oven at 250° for ten minutes (or microwave for five minutes). Add seasonings as desired.
     

More Options (not in the episode)

  • Mashed Carrots: Cut five to ten carrots in thick slices. Boil until tender in broth (of your choosing). Once water cooks away, you could mix the carrots with avocados (live we've done with potatoes)..
     
  • Carrot Pancakes: Start like you did with the baked carrots but instead of baking, fry in a little bit of oil or fat from meat until the carrots are done (similar to the potato pancakes).
