Gravy is pretty simple to make and yet is very easy to cook incorrectly. Rice flour makes this even trickier because rice flour will clump more easily than other flours if not stirred enough and if stirred too much will become very grainy. Therefore, it is highly suggested that the mixing in of the rice flour be done as slowly as possible to ensure that neither of these happen.

ALTERNATIVES

Although any flour would work, rice or quinoa flour are the best options since they are a little easier to control than a heavier flour, such as potato flour. Potato flour gets too thick and forms into clumps when used resulting in a chunkier gravy.
