Healthy Meatballs (More Information)

Ingredients

This recipe allows you to make a healthier meatball, and also a meatball that makes for a more complete meal as it contains plenty of vegetables along with the meat. Although any ingredients do work in this, there are specific reasons each was chosen:

  • The onions will provide a spiciness but that spiciness will be softened (and sweetened) when fried. Leeks work well in this recipe too.
  • The flavor from the carrots will grow stronger when cooked; as a result the carrots provide a large portion of the flavor in this recipe and some of that flavor will be a sweetness from the high starch in the carrot.
  • The broccoli will also provide flavor, but the flavor will stand out against the carrots and the onions making for a more distinctive flavor.
  • Finally, pork is used in this recipe, though any meat would work. Pork is leaner and benefits from fast cooking methods, such as frying.

Alternatives

Instead of meatballs, pack the raw meat and vegetable mixture into a baking dish along with half a cup of broth (any kind). Bake that at 250° for about an hour or until the pork is done for a pretty tasty allergy free meatloaf.
