Oaty Potatoes (More Information)
Oats are a perfect breakfast food - they are filling, nutritious and are easy to cook. Rolled oats are considerably easier to cook than other varieties making them an even better choice for a quick breakfast. This is because the rolled are pre-steamed and because they are pressed thin - both of these steps make the rolled oats faster to cook. That said, any varieties of oats can be used in this recipe but the cooking times will change.
Frying the oats with the sweet potatoes will do two things - first all the starch released from the sweet potatoes while they were fried will be absorbed by the already sticky oats thus making the oats even stickier. Second, the oats will absorb any remaining oil allowing the sweet potatoes to finish cooking in a dry skillet - allowing them to get a bit crunchier before they are pulled off the heat.
The sweet potatoes provide the substance and the crunchiness in this recipe. Also, the sweet potatoes will add in much of the flavor to this recipe as oats do not have as strong a flavor. Using a juicier variety of the sweet potato, such as the Jewell, will help increase the sweetness in this recipe. Also, as stated in the video, cutting the sweet potato into thin slices will help the sweet potato to cook faster (by having the sweet potato cut into smaller pieces, there is less starch to be broken down during cooking).
