Potato Burgers (More Information)

Chopping the potato fine, or blending it in the food processor, will release the extra liquid from the potato and will break down the starch in the potato before cooking. When the chopped potato is mixed with the beef, it will add more moisture into the hamburgers and will make the hamburgers juicier.

During cooking the potatoes will cause more of the liquid to cook away. This will make the cooking time faster than normal. To keep the cooking times consistent between the beef and the potatoes, the potatoes were partially cooked in advance. This broke down enough of the starch in the potato that the potatoes will cook as fast as the beef. Otherwise, you'd end up with under-cooked potatoes and perfectly cooked beef (or overcooked beef and perfectly cooked potatoes).

For additional flavor, you could mix in a variety of other vegetables. For example, carrots, onions and broccoli. As with the potatoes, cooking this partially before mixing with the beef will keep the cooking times consistent.
