Only after it begins cooking, and starts to turn solid, will we want to break this into biscuit size pieces. That will result in it being gooier when it finishes cooking.

SUBSTITUTIONS

Also, rice flour is only one option. This works equally well with quinoa flour - as both flours cook in much the same way (since both are lighter flours). Quinoa will require slightly less water and slightly less baking powder.

ALTERNATIVES

Instead of frying this up, this recipe could easily be baked at 350° for about twenty minutes, flipping after ten minutes. When baking however, you will want to make the mixture a little thicker and then break the mixture into four pieces before it begins baking.
