Slow Cooked Chicken (More Information)
This is a slow cooking dish that, like all good slow cooking dishes, doesn't require too much work. After a quick preparation, your work is complete. That said, the selection of ingredients is key.
This is a perfect way to cook chicken breast meat since it cooks it slowly in boiling liquid (in this recipe beef broth and tomato juice). Boiling it will heat the chicken slowly and evenly resulting in tender chicken. More importantly, cooking it this way will prevent the chicken from browning which will make the chicken moist and tender throughout.
The other ingredients are standard slow cooking foods. Potatoes provide plenty of substance along with absorbing a lot of the flavors the chicken won't absorb (including the flavors from the chicken). The same is true of the carrots, except they will also add in a slight sweet flavor to the dish.
The broccoli and the tomatoes will add a rich flavor. If you can eat them, green beans will do something very similar. Also, boiling the tomatoes during the slow cooking process will allow the tomatoes to break down making their flavor spread through the dish and spread into the chicken. That will give the chicken even more flavors (flavors from the broth plus flavors from the tomato).
