A few details
The squash will require longer to cook than the bison. Therefore, this recipe gives the squash an additional fifteen minutes in the oven allowing it to begin cooking before adding in the bison.
However, the bison will cook more efficiently if it is started on the stove top first - instead of cooked solely in the oven. This also allows for more control over the cooking process. Since bison cooks quickly - as it is lower in fat - it is easier to overcook so a more controlled cooking process is preferable.
Finishing the bison in the oven will also enhance the flavor of the buttercup squash, allowing it to absorb the bison flavors (which will be stronger once the bison has already begun to cook).
