The pineapple provides the sweetness, however also provides the liquid by which the pork will cook. Since the pork is cooked by a liquid method it will not brown as normal; the pork when cooked will be a dull gray. Meanwhile, the sweet potatoes will provide the crunchiness.
Alternatives
Instead of frying, this recipe works when baked in the oven at 300° for twenty to minutes.
When baking add in another 1/4 cup of pineapple juice to prevent the pork from sticking to the pan.
Also, with less pineapple mixed in, and different
varieties
of sweet potatoes, these same ingredients can make a sausage or even a soup.
