Sweet Fried Bread (More Information)

A few details

The ingredients: Rice flour has about the same consistency of other flours however as it does not contain gluten it will behave differently than what you might expect if you have only ever cooked with wheat flours (it does not mix as easily).

Since this dish avoids yeast, the baking powder will provide the leavening systems this bread requires. Do be careful however: if you are avoiding corn, you will want to select a baking powder made from potato starch.

The other ingredients, in particular the cinnamon and the orange juice, are predominately for flavor. While adding more will add more flavors, the other ingredients will need to be increased accordingly (too much orange juice and the mixture will not become a dough instead it will be too wet; too much cinnamon will require more liquid.) Also as oranges vary in amount of juice contained, it might be necessary to add more rice flour to ensure a proper balance of dry to wet ingredients.

When cooking: When mixed, the mixture should be the consistency of a traditional dough. Only when it is at this state, move it into the pre-heated skillet coated in canola oil. (Any oil will work however select an oil with a higher smoke point so this does not burn.)

After five minutes on each side, the bread should be solid and have a crust formed. At this point, move it off the heat and let it rest on the counter. This will give the rice flour a chance to rest and complete cooking.

Alternatives

For one, this recipe works with any fruit juice you desire. As for the juice, the water mixed into the dough could easily be replaced by fruit juice if more sweetness is desired. Be careful though as more juice makes it easier for the dough to stick to the skillet when cooking. If using the added juice be sure to add in a little bit more oil to the pan to prevent extra sticking.
