Tomato and Broccoli Salad Dressing (More Information)

Frying the tomatoes and broccoli will bring out the best flavors of both. Blending the two together will mix the flavors together; blending them together when hot will mix the flavors when at their peak together. Also, blending fried broccoli is much easier than blending raw broccoli (since fried broccoli is much softer).

Although the recommendation provided in this recipe was to place this over a salad, this salad dressing (of sorts) works just as well when placed over chicken or turkey as well as when placed over rice, quinoa, potatoes or even sweet potatoes. It is a very flexible, and quite tasty, dressing.

It also tastes as good cold as it does warm. However, when placed in the fridge, some of the tomato juice will solidify so it may need to be given a quick run through the microwave so that it is more liquid when eaten.
