Tomato-Broccoli Soup (More Information)

This is a simple tomato based broccoli soup that relies on ground beef for added texture and richness. The broccoli and the tomato will add in the main flavors but will also provide extra creaminess; the tomato will add in extra richness.

Starting the beef cooking in some of the broth and some of the tomato juice will add in extra flavors to the beef. It will also cook the beef in a liquid which will keep it from cooking too quickly (and therefore make the cooking more even).

Also, largely due to the tomatoes, the tomato juice and the beef fat, this tastes good cold and even freezes well. However if you are making this specifically for freezing, adding in more tomato juice and more broth as that will improve the flavors once the soup is re-heated.

Also, this simple soup can be made even easier by using frozen broccoli and canned tomatoes (although fresh tomatoes and fresh broccoli work just as well).
