Fast Chicken / Chicken Limited

Chicken doesn't have to be boring and it doesn't have to take hours to cook it.

Needs

  1. 1 chicken breast, cubed
  2. 1/2 onion, chopped
  3. 1 tomato, diced
  4. 1/4 cup rice
  5. 1 cup broth
  6. 1/2 cup pineapple
  7. 1 cup pineapple juice
 

TIME

  1. PREP: 5 minutes
  2. COOK: 20 minutes

SERVES

  1. 2-3 servings

Cooking it up

  1. Begin by frying the chicken cubes in the 1/4 cup of broth. Meanwhile, boil the rice in water - or in more broth.
  2. After the broth with the chicken has nearly all cooked away, add in the onion and pineapple. Let that cook together for about five minutes or until the chicken is about 90% of the way done.
  3. At that point, add in carrots, the rice and the tomatoes. Let that cook together until the rice is crunchy and the chicken is fully cooked.
