Fried Orange Potatoes

Oranges, potatoes and beef. How could you ask for anything more?

Needs

  1. 2 russet potatoes
  2. 1 pound ground beef
  3. 2 oranges (Valencia)
 

TIME

  1. PREP: 15 minutes
  2. COOK: 25 minutes

Cooking it up

  1. Cut one of the two russet potatoes into fine slices (using the peeler) and cut the other potato into thin cuts. Also, cut up one of the oranges in larger slices (it will be used for juice not for the meat).
  2. Meanwhile, start cooking up the ground beef over medium heat. After five minutes, or once the beef has just started to brown, remove the meat from the pan, leaving behind the beef fat.
  3. In the pan with the beef fat, start cooking the thin cuts of the potato (the fine slices will be saved for later). Let those begin to cook for one minute.
  4. After one minute, add in the meat from one orange and the juice from the second orange. Stir together.
  5. After two minutes, add the beef back into the pan and cook until ground beef and potatoes are finished.
