Pork and Oranges

Rice and potatoes (no we aren't trying to overload on carbohydrates), tomatoes and oranges (don't knock it till you've tried it) and pork all mixed up in a delicious dinner that is easy to make and completely free of common food allergies. Read the recipe details.

Needs

  1. 1 cup rice
  2. 2 cups broth
  3. 1 cup tomato juice
  4. 1 cup tomato (chunks)
  5. 1 potato (finely chopped)
  6. 1 orange (sliced)
  7. 1 pound pork
 

TIME

  1. PREP: 5 minutes
  2. COOK: 20 minutes

  1. 4 servings

Cooking it up

  1. Begin by boiling the rice in the tomato juice. Once that comes to a boil add in one cup of the broth. Once that comes to a boil add in the onions. Let that cook for two minutes then add in the tomatoes.
  2. After the rice is fully cooked, and most of the liquid has cooked away, remove the rice and tomatoes from the heat and let it rest.
  3. Meanwhile in the same pan, begin heating up the pork, salting the pork as needed for taste. After the pork has cooked for a minute, add in the remaining cup of broth.
  4. Once the pork is no longer pink (but not yet done), add in the finely chopped potato.
  5. Once the pork is 90% done, add in the orange slices, stirring until the orange becomes mashed up and well mixed in.
  6. Add back in the rice along with whatever liquid the rice still has. Stir together until the oranges and tomatoes are well mixed. Remove from the heat and enjoy.
