Potato Orange Beef Soup (POB Soup)

Needs

  1. 3 Yukon gold potatoes, chopped
  2. 2 oranges - Valencia, sliced
  3. 1 onion, chopped
  4. 1 pound ground beef
  5. 2 cups beef broth

  1. PREP: 5 minutes
  2. COOK: 20 minutes

Cooking it up

  1. Start cooking up the beef in a medium size stock pot over medium-high heat.
  2. Once it begins to brown, add in the Yukon Gold potatoes.
  3. As the potatoes just soften, add in the onions and let those cook for five to ten minutes or until the potatoes are nearly complete.
  4. Once the potatoes are ninety percent complete, add in the sliced oranges. Mix well and let cook for one to two minutes or until oranges are mixed in well.
  5. Finally, add in the beef broth. Once the beef broth comes to a boil, reduce the heat to medium-low. Let that cook for another two to three minutes stirring every minute.
