Fried Flat Potatoes - Potato Pancakes

Needs

  1. 2 russet potatoes
  2. 1 cup water
  3. 1/4 cup beef fat (from half a pound of ground chuck)
 

TIME

  1. PREP: 5 minutes
  2. COOK: 15 minutes

SERVES

  1. 2-4 servings

Cooking it up

  1. Begin with slicing the potatoes into thick slices. Drop the thick slices into boiling water and let cook for five minutes.
  2. After five minutes, pull out of the water and let rest for two minutes. After resting, smash the potato slices until they are slightly flatter.
  3. Fry the flat potato slices for five minutes per side in beef fat, broth, fruit juice or with no liquid whatsoever. After cooking, pull off the heat.
