Quinoa Salad

Needs

  1. 1 cup quinoa
  2. 2 carrots (diced)
  3. 1 onion (diced)
  4. 1 cup pineapple
  5. 1 cup broth (and kind)
  6. 1/2 cup pineapple juice
 

TIME

  1. PREP: 5 minutes
  2. COOK: 20 minutes

SERVES

  1. 2-4 servings

Cooking it up

  1. Begin by cooking the quinoa in one cup of broth. Optionally, before cooking, pre-soak the quinoa in half a cup of pineapple juice.
  2. Meanwhile, fry the carrots, onions, the pineapple chunks and the half cup of pineapple juice for ten minutes (or until the carrots are softened).
  3. Once cooked, pour into food processor and blend until it is a chunkier mixture. Serve as is or chill for an hour or more and serve cold.
