Squashed Bison

Bison and squash don't have to be boring. Read the recipe details.

Needs

  1. 2 buttercup squashes
  2. 1 pound ground bison
  3. 2 leeks, chopped
  4. 2 tomatoes, chopped
  5. 1/2 tablespoon canola oil
  6. Salt
 

TIME

  1. PREP: 15 minutes
  2. COOK: 45 minutes

SERVES

  1. 2-4 servings

Cooking it up

  1. After cutting a lid off the buttercup squashes, pour in 1/4 tablespoon of canola oil into each of the larger halves. Cover the larger half and place in 350 degree oven for fifteen minutes.
  2. Meanwhile, begin heating up the ground bison and the leeks in a skillet. Remove from the heat just as the bison loses all traces of red.
  3. After fifteen minutes, remove the buttercup squash from the oven and inside each place half a pound of the partially cooked ground bison and leeks. With the bison inside, lid up the squashes and place back in oven for another ten minutes.
  4. After ten minutes, add the tomatoes into the squashes (along with the bison). Let cook the squashes cook for another five minutes before removing from the oven.
