Sweet Potato Stir Fry

Needs

  1. 1 sweet potato, cubed
  2. 1 onion, chopped
  3. 2 carrots, finely chopped
  4. 1 cup broccoli
  5. 1/2 cup tomatoes, diced
  6. 1/2 cup tomato juice
  7. 1/2 cup rice
  8. 3/4 cup water
 

TIME

  1. PREP: 10 minutes
  2. COOK: 20 minutes
    (With optional steps: 35 minutes)

SERVES

  1. 2-4 servings

Cooking it up

  1. While the rice is cooking in the cup of water, begin frying the sweet potato, onion, broccoli, carrots and tomatoes in the half cup of tomato juice. Stir once every other minute while it cooks.
  2. Once the rice has finished cooking, add the rice in with the stir fry mixture. Allow that to cook until all the tomato juice has been fully absorbed and the sweet potato is fully cooked.

Optional Steps

  1. After cooking, let the stir fry rest for 30 minutes. After it has rested, blend it up in the food processor.
  2. Once the stir fry is ground up, press into small patties. Bake the small patties in the oven at 300° for fifteen minutes or until they are crunchy.
